Some people are fascinated by honey.
Our father was fascinated by bees.
His deep respect for these remarkable creatures inspired the founding of Whistle Creek Apiaries© in 1976. Today, that same appreciation for bees and the honey they create continues to guide everything we do as we proudly share exceptional raw honey from our family to yours.
Our father’s lifelong admiration for honeybees and the remarkable role they play in nature grew into an extraordinary connection. If a bee landed on him, he would simply smile and gently stroke it until it flew away. That genuine respect and love for bees became the foundation of the business he built and the values that continue to shape Whistle Creek Apiaries© today.
Although our father is no longer with us, his passion continues to guide Whistle Creek Apiaries©. What began as one man’s fascination with bees has grown into something much greater; a family legacy supported by the dedicated individuals who have become an important part of the Whistle Creek family.
Located near Whistle Creek, just west of Lexington in the scenic Shenandoah Valley of Virginia, our family-owned farm is dedicated to continuing to share the exceptional raw honey that has become a part of the Whistle Creek tradition. We are honored to be a Virginia’s Finest producer, recognized for our commitment to quality, tradition, and the rich heritage of Virginia-made products.
Looking ahead, we hope Whistle Creek Apiaries© will continue to honor our father’s vision and remain a tradition our family can carry forward for generations to come.
our honey
Great pride is taken in the fact that all of our honey is raw, natural, unrefined, and unprocessed. High temperature and pressure filtering techniques practiced by commercial operations removes beneficial enzymes and nutrients from the honey. This also destroys its singularly wonderful flavors.
Because Whistle Creek Apiaries© honey is NOT heated to high temperatures, it may crystalize. Crystallization does NOT affect the purity of honey as it will never spoil. If desired, it can easily be liquefied by placing the container in a pan of warm water (not higher than 120°F or hotter than the hand can bear.) DO NOT OVERHEAT OR MICROWAVE. Refrigeration hastens granulation. Keep in a warm and dry place in a closed container.
Whistle Creek Apiaries© honey is unique because our techniques differ from that of the average beekeeper’s. In addition to making a medium wildflower blend, we also use a labor-intensive method to provide a versatile abundance of delicacies.
By "isolating the flow," grading, and separately extracting the honey, we can create diverse flavors and a variety of colors of honey.
The colors and flavors of our honey depend on the seasonal flowers from which the bees gather nectar. It comes in a wide range of colors from very light to darkening shades of amber.
Flavors range from mild to full-bodied and are strictly a matter of personal taste preference. We offer the following types of honey when seasonally available:
Thistle - Delicately floral with a light, smooth, body and a clean lingering sweetness. A beautifully balanced honey with a refined mellow finish.
Clover - A timeless favorite with a mild, pleasantly sweet flavor gathered from the fields of Dutch white clover. Smooth, versatile, and perfect for everyday enjoyment.
Wildflower - Harvested from a diverse blend of seasonal wildflowers, this medium-bodied honey has a well-rounded flavor with subtle floral complexity. Each harvest reflects the unique blooms of the season.
Tulip Poplar - Dark amber in color with a bold, full-bodied character. Rich and robust, this distinctive honey features deep caramelized notes and a uniquely complex flavor that sets it apart.
